Green tea has been the most loved beverage throughout Asian countries for many centuries. However for the Western world it was black tea that was far preferred over green tea up until recently. As we’ve gained more knowledge about the unique flavor of green tea and numerous health advantages, it has gained recognition across the globe. The green tea, as well as the black tea, comes directly from Camellia sinensis tree. The difference between green tea and black tea is in the way it is prepared. The black tea is fermented in the process of processing, while green tea isn’t. After the tea leaves have been picked then laid out to dry for between 8 and 24 hours. This allows the majority part of the water to evaporate. In order to stop the burning (fermentation) process leaves are steam-cooked or pan-fried. After that, the leaves are wrapped before the final drying process takes place. After the final drying process the leaves, that are still green, are sort, graded, and then packaged.
